Quick & Easy Antioxidant Soups

I will demo several delicious soups that are highly nutritional and are perfect for this time of the year. High in antioxidant vitamins and minerals to keep the flu away.

Spinach Soup

Ingredients

  • 1 bunch of spinach
  • 1/2 c coconut butter
  • 2 celery stalks chopped
  • 1/2 English cucumber chopped
  • 1 c parsley chopped
  • 2 garlic cloves
  • 1/2 t cumin
  • 1/2 t Himalayan pink salt
  • 1/4 t cayenne pepper
  • 1 fresh lime juice
  • 2 c water (hot or cold)

Preparation
Blend all ingredient in a high speed blender until smooth and creamy.
